In this way, you get a flatter surface and a healthy coffee density distribution before tamping in the portafilter, thus you can largely get rid of channeling and micro-channels in the coffee caused by uneven distribution. As a result, you can brew a more consistent flow and a more delicious espresso during the espresso flow.
